Zhejiang cuisine is light and exquisite, as representative of food from along the lower Yangtze River. One famous dish is West Lake Vinegar Fish, which looks delicate and tastes tender, with the refreshing flavors of nature. Many Chinese restaurants in China, as well as other parts of the world, serve this dish, but usually with less authentic flavor compared to that found in Hangzhou, capital of Zhejiang Province, which has unique access to the fishand water from West Lake

There is an interesting story behind it. Goubulisteamed buns were first sold in Tianjin about150 years ago. A local youngman by the name of Gouzi (Dog) worked as an apprenticein a shop selling baozi (steamed buns). Three years later, he set up hisown baozishop. Because his buns were SO delicious,he soon had a thriving business, with moreand more people coming for the buns. Ashardworking as Dog was, he still couldnot meet the demands of his customers, who hadto wait a long time. Impatiently, some peoplewould call out to urge him on, but as he wasbusy preparing the buns, he had no time to answer. People therefore called his bunsGoubuli, meaning "Dog pays no attention.' This eccentric name, however, had very goodpromotional effects, and has been used eversince. Now Goubuli is a time -cherished brandname in Tianjin.

The serenity and seclusion of Xitang is also reflectedin the depth of the house, a Chinese aesthetic ideal in the construction of a residence, as evidentin the verse line, "How actually deep is the deep compound?" Many rich families built residences withseveral courtyards in a row. Three courtyards in а rowis commonplace; while a large residential compoundhas five or seven courtyards. Zhongfu Hall, mentioned earlier, has seven courtyards: the first isthe entrance hall with high gates, carved beams andpainted ridgepoles; the second is for sedan-chairs;the third is the main hall, called Zhongfu Hall; thefourth, for flowers; the fifth, the living quarters; thesixth and seventh, respectively, for the granary andhired staff. With a garden rearmost, this compoundextends more than 100 meters long. Such an architectural style explored the essence of "depth" tothe extreme.

The residences in Xitang are built alongside the water. "Families live in the midst of waters, bridges arch over the rivers, passengers walk across the bridges, boats pass under the bridges; shops stand at the head of bridges, and their reflections sway in the water," is how people described the village. A newcomer strolling through the town is soon plunged into a real-life intoxicating landscape painting. Xitang is situated on the shores of Taihu Lake, with the Great Canal passing by it. There are nine winding rivers intersecting the town into eight blocks. Each house is located facing a river, as are the shops. Xitang people row small boats along the rivers to their destinations, instead of walking on foot through streets and lanes. Weeping willows and colorful flowers grow along the riverbanks, and flocks of water birds and

Sichuan, known as Nature's Storehouse, is also a storehouse of cuisine. Here, each and every restaurant provides delicious yet economic culinary fare. The ingredients for Sichuan cuisine are simple but the spices used are quite different. Sichuan cuisine is famous for its spicy and hot food, yet just being hot and spicy does not necessarily distinguish it from other hot and spicy cuisines such as Hunan or Guizhou cuisine. What is really special about Sichuan cuisine is the use of Chinese prickly ash seeds, the taste of which leaves a feeling of numbness on one's tongue and mouth. Besides this unique spice, Sichuan dishes are also usually prepared with other spices like chili pepper. Using fermented bean sauce and a set of unique cooking methods, Sichuan cuisine is now famous and popular across the world. Over recent years, there have appeared many more renowned restaurants specializing in Sichuan cuisine, such as Tan Family Fish Head. Guangdong Province is located in southern China, with a moderate climate and abundant produce all year round. As one of the earliest ports open to foreign trade, the province has developed a culinary culture with its own characteristics that has exerted a far-reaching influence on other parts of China. Guangdong cuisine is famous for its seafood as well as for its

Windows are very important in this aspect. In Chinese horticulture, windows are always designed in the shape of a fan and referred to as "convenience windows." Through the windows, visitors can view the picturesque bamboo groves and mountains outside. Joyous Longevity Hall, in the Summer Palace in Beijing, has windows on all its four walls, with its surrounding walls facing Kunming Lake. Each window view becomes the equivalent of a vivid painting. In fact, garden designers bestow these windows with another name—"absorbent windows," through which the sights of different places interact, thus setting the landscape of the garden in motion. More interestingly, through the windows, visitors may see different views at different angles, and thus the composition of the garden becomes infinitely enlarged.
